Grapes

100% Arinto from the Azores.

Concept

The wine made from the second fraction of the Azores Arinto presses. Combining Sur Lies from the 2018, 2020 and 2021 vintages. The result is a Sur Lies with the texture we have become accustomed to, but with a depth and complexity that only time can give! Arinto dos Açores is an indigenous grape variety and exclusive to the Azores Islands. This Arinto dos Açores Sur Lies, produced only from the 2nd press, heavier, in which the grapes are squeezed more, therefore having more contribution from the skin and consequently more salts, salinity from the soil. Although considered by most producers as worse than the first ones for having a lower acidity level and higher pH, here in the Azores we have plenty of acidity to balance with the more intense level of the second presses, further accentuated by fermentation on lees.

Tasting Notes

Straw citrine yellow color. Pure citrus aromas, citrus with notes of orange, with a complexityadditional to the long stage on lees.tense attack, textured but fresh with a minerality and acidity verypresent, good persistence and notessaline and briochadas.

Viticulture

A unique terroir in the world, in the middle of the Atlantic Ocean, at the base of the Pico volcanic mountain, the vineyards are planted in the crevices of the rock, near the sea, where you can hear the "singing of the crab", because this is where there is more sun and heat. A proximity of, sometimes, few meters that requires the vineyard to be protected by walls (currais), from the strong and saline winds of the Atlantic.

Vinification

Selective manual harvesting in 20kg baskets, pressing of the whole bunch, separation of first and second presses, being only the second press used for this wine. Spontaneous fermentation in horizontal stainless steel vats or barrels used.

Gastronomy

Fresh, very mineral and saline. Ideal partner for oysters, barnacles and bivalves. It also works with grilled fish and more complex fish that involve butter.

Alcohol

12,0% Vol.
