Opened in February 2025, and distinguished with a Michelin Star and a Green Michelin Star – the first to arrive in Évora – just over a year later, in March 2026, A Cozinha do Paço, a restaurant in Évora, located in the Paço do Morgado de Oliveira, was born from the desire to rediscover an Alentejo region whose memory has been lost.
What is practiced in the fine dining restaurant led by chef Afonso Dantas (whose kitchen is located, precisely, in the place of the original kitchen) is also a reflection of this philosophy – and of the philosophy that António Maçanita applies to wine. The idea is to reinterpret an old, ancestral Alentejo, respecting and honoring that origin. Inspired by the region and its recipes, the chef applies his own ideology and brings something different, while simultaneously paying tribute to the place where he is located: taking the traditional products (70% of them grown in the palace's garden, others supplied by local producers) and giving them new expression through a contemporary language, in micro-seasonal tasting menus where the classic French inspiration that is the basis of Afonso Dantas' cuisine is evident.
Wine is, of course, a central element of the tasting menus, with pairings built from the Fitapreta wine cellar, exploring the complexity of 90 different cuvées over 20 years: a gradient of António Maçanita wines, from the Azores to Madeira and Douro, with a predominance of his Alentejo wines.
As in the past, meals extend across several rooms – five in total, all restored and returned to their original function, still retaining their medieval features: the tribune of the palace's former chapel, where two astonishing frescoes were found; the Enxarrama Room, named in homage to the wine recovered by António Maçanita in 2024, and featuring a medieval wine press; the Noble Hall, the main center of activity in the palace; the Wine Cellar Room, another of the building's various activity areas; and the Morgado's Office, which was the most private room, where the Morgado received his closest friends.
A history that we bring to the table, in an experience that aims to be more than just gastronomic, but a complete immersion in the identity of the Palace and the cuisine practiced in homage to the place where we are.
