Castelão (Periquita), Trincadeira (Tinta Amarela) and Aragonez (Tempranillo).
A “non vintage” Rosé that blends the youth and freshness of the youngest vintages with the complexity of lees ageing, that only older vintages can give. It is refined and complex, without ever loosing the simplicity and fresh - ness that makes a great Rosé.
Light salmon colour. The creamy texture on the pallet and a sensation of sweetness is perfectly balanced with a refreshing level of acidity.
Continental Mediterranean climate. Hot and dry with cold nights.
Store at 6-8ºC to be enjoyed at 10ºC.
The vines are cultivated under integra - ted production regime, on infertile rocky schist or granitic soils and mature to a peak of ripeness in the hot and dry Mediterranean climate, while retaining refreshing acidity from the cold nights. The vines naturally produce low-yields of small, highly concentrated berries with intense aromatics. After tasting in the vineyard indicates the grapes have have reached optimal fruit profile, they are handpicked and transported to the winery in small boxes.
All bunches are inspected for quality on a sorting table. Indigenous yeast fermentation, 55% drained juice and 45% whole bunch pressing.
Well matched to a range of lighter dishes such as seafood, pork and chicken. Surprisingly successful with more strongly flavored Indian, Thai, and Japanese cuisine.
