Concept


At the foot of the Serra d'Ossa is this Chão dos Eremitas, the place where the Hermits of the Order of São Paulo, Os Paulistas, chose to plant their vineyards. Two streams bring rainwater down from the Serra to keep the ground cool in the torrid Alentejo heat. These vineyards were of such importance that a Papal Bull of 1397 exempted the Paulistas from vineyard taxes and reinforced their importance. This Paulistas White comes from a plot planted in 1969 in coplantation (mixed vineyards), revealing an Alentejo that has been lost in time.

History: This place is special, you can feel it! Two streams bring rainwater from the mountains, never lowering the water table below 5 meters. This is where vineyards used to be planted, there is evidence of uninterrupted wine production since the 14th century, but archaeology goes further, as the discovery of the only Phoenician wine amphora in the interior of the country, dating back to the 8th century BC, links this place to wine some 900 years before the arrival of the Romans, in what is 3,000 years of history linked to wine.


Viticulture


Grapes are grown under a certified organic regime, without the use of herbicides. Our vineyards are also all certified under the Alentejo sustainability program.


Vinification


Manual night harvest, direct press, no sulphites until the end of fermentation, no decanting, spontaneous alcoholic and malolactic fermentation in old barrels. Aged for 14 months.


Tasting notes


Citrus yellow color and nose with notes of lime, citrus and some dried leaves. In the mouth, an attack of acidity, texture and a lot of unctuousness. In the aftertaste there are repeated aromas, some dairy aromas and cream.


Gastronomy


It goes well with fatty white fish such as lily, sherry, sea bream and sea bream in its pure version, grilled and salted, withstanding some fat, cream, butter.


Conservation and Service


Store at 6-8ºC to be served at 10ºC and drink at 12ºC.
