Concept


A quest to understand the impact of traditional carving on the production of Alentejo whites. Respect for local clay and traditional pitch, using old Alentejo carvings, but revisiting ancient texts that reinforce "open spout" winemaking, without skin contact, and which preserve the unique characteristics of Alentejo soils and grape varieties.

Tasting notes

A distinctive wine that is part expression of the fruit and the freshness of the best local grape varieties combined with a secondary
dimension of earthy minerality with an almost chemical edge. The texture of the mouth-feel is supported by the tension of the acidity.

Production

2 866 numbered bottles of 0,75L, released in June 2024.


Vinification


Manual harvest at night, sorting table, direct press without crushing, no addition of sulphites or any other additive. The must decays for 6-12 hours and is placed in vats of between 600-1000 liters. The vats are old, weighed down in the traditional way with a mixture of pine resin and beeswax, and the vats are between 1906-1946.

Conservation and Service


Store at 6-8ºC to be served at 10ºC to be drunk at 12ºC.

Gastronomy


Goes well with fresh salads, pasta, fish that reinforce the earthy notes such as mushrooms, beet, truffle and fresh citrus notes.


Soils


All our grapes come from top quality vineyards in the Alentejo region of southern Portugal. The vines are cultivated on clay-limestone soils.
