Inspired by traditional sparkling wine production methods, this wine is crafted by blending each new harvest with a portion of "vin de reserve."

Predominantly granite-based soils resulting from the degradation of the bedrock, with limestone content varying from plot to plot, leading to soil pH levels ranging between 5.7 and 8.2.
The vines, with an average age of 25 years, are dry-farmed (without irrigation) and cultivated organically, with all parcels also part of the Alentejo Sustainability Program.
Night harvest by hand, followed by sorting and direct pressing without crushing. Cold settling for approximately 12 hours, with no additives. Spontaneous fermentation in tanks without temperature control, allowing for both natural alcoholic and malolactic fermentations. The wine of the current year is blended with a 5-year solera "reserve wine." Secondary fermentation takes place in the bottle with free yeast.
Aged for 36 months sur latte (on the lees).
Limited to 746 numbered bottles, released in October 2024.
Clear straw-yellow color with an intense nose of citrus and toasted bread notes. Medium-bodied with beautiful acidity, flavors echo on the aftertaste, with a very long finish. Fine bubbles, with excellent texture and persistence.
Ideal with good company, to start a meal, with seafood, or complex enough for more elaborate fatty fish dishes.
Store at 5ºC and serve at 7ºC, allowing it to reach 9ºC for optimal enjoyment.
