Inspired by traditional sparkling wine production methods, this wine is crafted by blending each new harvest with a portion of "vin de reserve."

Mostly granitic soils, resulting from the degradation of the mother rock by varying the percentage of limestone from parcel to parcel, varying the PHs of the soils between 5.7 and 8.2.
Vineyards with average age of 25 years, dry farmed under Organic Production. All our vineyards are certified within the Alentejo Sustainability Program.
Night manual harvesting, sorting table, direct press without crushing. Cold decanta- tion for around 12 hours, without added sulphites. Spontaneous fermentation in inox. Every vintage is blended back to the “reser- ve wine”, a 5 year old solera. Second fermentation in bottle, free yeast.
Aged for 36 months sur latte (on the lees).
1679 numbered bottles released in November 2025.
Clear straw yellow color, intense nose and notes of citrus and pain grillé. Medium-bo- died attack, with beautiful acidity, aromas are repeated in the retronasal. Very long finish. Fine bubble, good texture and persistence.
Ideal with good company, to start a meal, with seafood, or complex enough for more elaborate fatty fish dishes.
Store at 5ºC and serve at 7ºC, allowing it to reach 9ºC for optimal enjoyment.
