Concept


An "undated" rosé that combines the freshness of younger vintages with the complexity of ageing on the lees that only older vintages can provide. It is fine and complex, without ever ceasing to be fresh and simple, as a great Rosé should be.

Tasting notes


Bright salmon color. It has a creamy texture on the palate that is balanced by a refreshing acidity.

Conservation and Service


Store at 6ºC to be served at 10ºC to be drunk at 12ºC.

Soils


The grapes come from vines between 20 and 50 years old. The soils are mostly granitic, resulting from the
degradation of the mother rock, with the percentage of limestone varying from plot to plot, and the PHs of the soils varying between 5.7 and 8.2.


Gastronomy


A superb accompaniment to fish dishes, seafood and salads. It has volume and structure for white meat dishes.
Perfect for Indian, Thai and sushi dishes.


Viticulture

Water being close by is a determining factor in all our vineyards, ensuring that the water table is close by, which ensures fresh soils and unirrigated, dry viticulture. Our vineyards are either cultivated or under the Organic Production regime, and they are all part of the Alentejo Vineyard Sustainability Program.


Winemaking

Manual harvest at night, followed by gentle crushing into gravity tanks (the grapes never touch the pumps), with an open spout (open valve). Then natural cold decantation, without any additives. Spontaneous fermentation in stainless steel vats or barrels. 55% sangria and 45% direct press. Bottled in July 2024.
