65% Arinto, 35% old vines (Alicante Branco, Trincadeira das Pratas, Roupeiro, Rabo de Ovelha).
White produced from traditional Alentejo grape varieties: Arinto and old vines, with minimal intervention, no addition of sulphur dioxide until the end of fermentation and spontaneous fermentation in barrels and long ageing on the lees.
Straw citrus yellow color. Intense, complex aroma with notes of grapefruit, orange peel and some fresh cream. In the mouth, a textured attack, with present freshness, a rich, intense aftertaste. Persistent finish.
Manual harvest at night, sorting table, direct press without crushing and cold decanting for around 12 hours, without additives. Spontaneous fermentation in barrels without any temperature control. Spontaneous alcoholic and malolactic fermentation.
12 months on fine lees, without battonage in 80% used barrels and 20% new French oak barrels.
A wine with a certain concentration, aromatic intensity and tertiary notes, it goes well with more elaborate fish such as baked fish, stews or simpler white meats.
