It was in 2010 that we started our first indigenous white trial. Today, 11 years later, all our wines are made from indigenous yeasts. But which indigenous ones? The ones from the winery? The ones from the vineyard? Here we only tested yeasts from the Morgado de Oliveira vineyard. We therefore made a "vat foot" in the vineyard, multiplying only the yeasts from the vineyard, and inoculated the barrels directly with these yeasts. The result? Our indigenous Arinto from Morgado.

History: The grounds of Morgado de Oliveira are blessed with water, with the silver water aqueduct fed by the estate's wells.
wells bought by King João II from Morgado de Oliveira at the end of the 15th century. Vineyards existed here before the Morgado was established in 1306. According to several authors, it is the oldest vineyard area in Évora that we can remember
Manual harvest at night, sorting table, direct press without crushing and without sulphites until the end of fermentation.
Cold decanting for around 12 hours, without additives. Fermentation in barrels without any temperature control using "pé de vat" from the indigenous yeasts of the Morgado de Oliveira vineyard.
Store at 6ºC and serve at 10ºC to be drunk at 12ºC.

Straw yellow color, intense nose, notes of linden, iodine in the mouth, textured and rough, like something only nature can do.
