Concept


A search to understand the impact of traditional carving winemaking on the production of Alentejo whites. Respect for the local clay and the traditional pitch, using old Alentejo carvings, however, reviewing old texts that reinforce the vinification in "open spout", without skin contact, and that preserve the unique characteristics of Alentejo soils and grape varieties.


Tasting notes


A different white, marked by the carving, based first on the fruit and freshness of the grape varieties, with a second dimension dominated by the earthy, almost chemical notes of the carving. In the mouth some texture, always supported by tension and acidity.

Production


4153 bottles of 0,75L.


Vinification


Manual harvest at night, table of choice, direct press without crushing, without any addition of sulfites or any other additive. The must decays 6-12h and is placed in hoists of dimensions between 600-1000 liters. The vats are old, weighed in the traditional way with a mixture of pine resin and beeswax, the vats being between 1906-1946.

Conservation and Service


Store at 6-8ºC to be served at 10ºC to be drunk at 12ºC.

Gastronomy


Goes well with fresh salads, pasta, fish that reinforce the earthy notes such as mushrooms, beet, truffle and fresh citrus notes.
