Produced using the traditional method without any dosage from a local grape variety planted in the crevices of the rocks, in a terroir unique in the world, at the base of the volcanic mountain, in the middle of the ocean and right next to the sea, where you can hear the "singing of the crab". This proximity, sometimes only a few meters, forces the vineyard to be protected from the strong, salty Atlantic winds by man-made stone walls. The result? Enthusiastic!
Straw citrus yellow color, with notes of grapefruit, some lime, almost honey. Aroma of sea. Tense, fresh attack with fine bubbles and lots of salinity.

Selective manual harvest in 20kg baskets, pressing of the whole bunch, transfer after 12h to 600-1000L horizontal fermentation tanks. First spontaneous fermentation.
Keep at 6-8ºC to be served at 10ºC, and to be drunk at 12ºC.
Fresh, very mineral and saline. Ideal partner for oysters, barnacles and bivalves.
